300ml Lukewarm milk
30g Fresh Compressed Yeast (or equivalent dry sachet)
2 Eggs
1/4 cup Castor Sugar
60g Butter, melted & cooled slightly
4 cups Plain Flour
2 tsp Mixed Spice
1 tsp Ground Cinnamon
1 cup Sultanas
2/3 cup Currants
1/4 cup Mixed Peel

Crosses
2 tbsp Self-raising Flour
2 tbsp Cold Water

Glaze
2 tbsp Sugar
2 tsp Gelatine
2 tbsp Hot Water

Mix together yeast and milk to form a paste. Whisk eggs and sugar. Add melted butter and yeast mixture. In a large bowl sift flour and spices. Stir through fruit and peel. Pour in wet mixture and mix well. Turn out onto floured surface, knead until smooth and elastic. Place dough into a large oiled bow, cover loosely and stand in a warm place for 45 mins, or until doubled in size. Turn out onto floured surface and knead well. Divide into 3 equal pieces. Cut each piece into 6 making 18 buns in all. Shape buns and place on lightly greased try and stand for 15 mins. Pipe on crosses. Bake in a hot oven for 15-20 mins, or until golden brown. Allow to cool slightly before turning out. Brush lightly with glaze.

To Make Crosses: Mix flour with water and pipe.

To Make Glaze: Combine in a small saucepan, stir until dissolved. DO NOT BOIL.
