2 tbsp. oil
1 tbsp. curry powder
2 onions, diced
2 carrots, diced
4 celery ribs, diced
2 tbsp. garlic minced
2 lbs. sweet potatoes, peeled and cut into chunks
2 c. low sodium vegetable broth
1 28 oz. can whole tomatoes
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. cayenne
1/2 c. chunky peanut butter
3 tbsp. roasted peanuts
1/2 c. light coconut milk

Directions:

Drain and quarter tomatoes.
Heat 2 tbsp of peanut oil in large dutch over or stockpot over medium heat. Add curry powder and cook, stirring constantly for 1 minute. Add onion, carrot, and celery, cook 2 more minutes. Add garlic, cook 1 more minute.
Stir in sweet potatoes, broth, tomatoes and bring to a boil. Simmer covered for 20-30 minutes
Add salt, pepper, peanuts, cayenne, peanut butter and coconut milk. Bring to simmer and cook for 20 more minutes.
Optional: serve over rice
