Pheasant, cleaned
pinch ceyenne
garlic cloves
buttermilk or heavy cream
flour
orange juice
clove, or i have used peppercorns (5 or 6)
cinnamon stick
cardamon seeds

grand marnier (can use this instead of orange juice glaze)

Directions:
Directions:
clean pheasant really good, combine buttermilk, ceyenne, garlic and soak pheasant in this for at least 30 minutes, roll in flour.
heat olive oil or butter in fry pan and cook pheasant until golden brown.

meanwhile: add orange juice, clove, cin stick, cardamon seeds and reduce until thickened ove med heat.
(have also used orange juice, sugar, peppercorns) and reduced, strain.

take pheasant and add to glaze until a little gummy on the pheasant.
OR
take pan off heat, add a little grand marnier (will cause a flame), return to heat until alcohol reduced out of it.

can also chop in small pieces and add over lettuce, see under salads for Pheasant salad.
