2 pounds of medium-thick fresh asparagus
2 teaspoons olive oil
salt & pepper to taste

Directions:
Directions:
Preheat oven to 400º. Rinse fresh asparagus under cold water, then cut the tough, woody bottoms off (about 1-2 inches from the base).
On a rimmed baking sheet, toss asparagus with olive oil and season with salt and pepper.
Roast until lightly browned and tender, about 25 minutes.

The intense dry heat of the oven concentrates and deepens the flavor. You may never boil asparagus again!
