1 1/4 cup flour
3/4 cup yellow cornmeal
1/4 cup sugar
2 tsp baking powder
1/2 tsp salt
1 cup milk
1/4 cup oil
1 egg, beaten

Directions:
Directions:
*Heat oven to 400º and grease pie pan.
Mix dry ingredients together in a bowl.
Add milk, oil and egg; mixing until ingredients are moist.
Pour mixture into pie pan.
Bake 20-25 minutes or until toothpick comes out clean.

**For a spicy kick--you can add some finely chopped jalapeño into the batter!
