1 (32oz) pkg frozen hash brown potatoes
1 lb cooked ham, cubed
1 med onion, diced
1 green pepper, diced
1 1/2 cups shredded Monterey Jack cheese
12 eggs, beaten
1 cup 2% or skim milk
1 tsp salt
1 tsp pepper

Directions:
Directions:
Place a layer of frozen potatoes on the bottom of the crockpot, followed by a layer of ham, then onion, green pepper and cheese. Repeat the layering process 2 or 3 more times, ending with a layer of cheese.

Beat the eggs, milk, salt and pepper together. Pour over the mixture inside the crockpot. Cover and cook on low for 10 - 12 hours (or overnight). Enjoy for breakfast or brunch the next day.
