5 lbs. potatoes (cooked, peeled and sliced)
1 lb. bacon
1 onion (chopped)
1 c. water
1 c. sugar
1 c. vinegar
salt/pepper
cornstarch and water (to thicken)

Directions:
Directions:
Mix together water, sugar, vinegar, and salt/pepper, set aside mixture. Cook, cool, peel and slice potatoes and set aside. Brown chopped bacon, add chopped onions, cook until onions are opac DO NOT drain. Add salt and pepper. Shake sugar mixture in a jar vigorously and pour over bacon and onions, simmer, then thicken like gravy with the cornstarch and water. Salt and pepper to taste and pour over potatoes.

Can add celery to bacon and onions (Grandma Mary never did).
Can add chopped green onions at the end.
