3 c fajita chicken, diced
6 T butter
1/2 c onion, diced
1/4 c green pepper, diced
4 cloves garlic, minced
2 tsp garlic powder
2 tsp chicken base
2 c heavy cream
1/2 c sour cream (extra for garnish)
3-4 chipotle peppers in adobo sauce
1 box tri-color rotini pasta
2 c Monterey jack cheese, shredded
1/2 c chives, sliced
1 tomato, diced

Directions:
Directions:
* Preheat oven to 350º F. Cook pasta and set aside. Cook chicken, dice and set aside. Puree heavy cream, sour cream, garlic powder, chicken base, and chipotle peppers.
* In skillet, melt butter then add onions and green peppers- cook until tender. Add minced garlic and cook a few more minutes. Add chicken and sauce, let simmer for about 5 minutes.
* Add chicken and sauce to pasta and mix well. Pour into casserole dish and top with cheese. Bake about 15-20 minutes, until cheese is melted.
* Garnish with tomato and chives, and sour cream if desired.

* You can use the precooked fajita chicken strips that come in a bag if you prefer.
The chipotle peppers in adobo sauce usually come in a small can, and for extra spicy, use four peppers. (I HATE spicy and I used three, it was just a little spicy. If you are weak like me I'd use just two)
* If you don't know what chicken base is like me, it's soup base, or you can use the bouillon cubes.
*I used a 9x9 casserole dish.
