1 pound 90% lean ground beef
1/2 tablespoon minced onion
1 clove garlic, pressed
1/2 teaspoon salt
1/2 teaspoon dried thyme leaves
1/4 teaspoon ground black pepper
2 cups mixed frozen vegetables, or peas and carrots
1 jar (12 ounces) beef gravy *I used homemade beef gravy*
4 servings (about 2 cups) hot prepared instant mashed potatoes *better with real mashed potatoes*
2 ounces cheddar cheese, shredded (1/2 cup)

Preheat oven to 375º.
Brown ground beef in skillet with onion, garlic, thyme, salt, and pepper.
Add vegetables and gravy, bring to boil. Spoon into oval baker or 9X9 dish.
Prepare potatoes according to box instructions. Or make mashed potatoes in place of instant.
If you have cake decorator you can use that for decorative potato placement; otherwise spoon potatoes around outside edge of dish.
Bake 25-30 or until thoroughly heated. Remove from oven. Sprinkle top with shredded cheese.
Let stand 5 minutes before serving

Gravy recipe: 1/4 cup butter, 1/4 cup flour, 2 cups water or milk, 2 beef bullion cubes. Heat water/or milk. Dissolve bullion cubes. Melt butter in small sauce pan, whisk in flour until makes a paste, Pour and whisk broth slowly. Continue to whisk until thickened.
