2 large malangas peeled and diced
4 cups chicken broth
2 cloves garlic, minced
1 small onion diced
1 tbsp. vegetable oil
+o- salt and pepper

Directions:
Directions:
Boil the chicken broth with the malanga for about 30 minutes. In the meantime sauté the garlic and onion in the oil until onion is soft. Puree the soup trough a ricer or mash the malanga in the same pan with the rest of ingredients. (If I have a piece of calabaza I will added for some color and flavor). I also like to add some lemon juice before serving this crema.

If you want just “mashed malanga” boil the malanga in some water until soft.

Prepare a mojo mashing some garlic, salt and lemon juice; add to this some hot vegetable oil. Mash the malanga with this mojo.
