3/4 C (6 oz.) Chopped toasted pecans
1 1/2 C flour
1 C whole wheat flour
1 C sugar
1 tsp cinnamon
3/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/4 tsp nutmeg
1 1/2 C peeled chopped peaches
3/4 C grated carrots
2/3 C oil
1/2 C milk
2 eggs, slightly beaten

Preheat oven to 350º. Bake pecans in a single layer on a baking sheet 5-7 minutes until toasted and fragrant. In a large bowl, stir together flours, sugar, cinnamon, baking soda, baking powder,salt and nutmeg. Stir in peaches, carrots, oil, milk and eggs. Mix just until moistened and fold in pecans. Spoon batter into a greased 9x5 loaf pan, or 4 mini loaf pans. Bake 55-60 minutes for a 9x5 pan or 40 minutes for mini pans.
