11/2 c. sugar
2 c. water
2 t. cream of tartar
24 Ritz Crackers
1 t. lemon juice
1/4 lemon rind
unbaked pie shell (top and bottom)
1/4 t. cinnamon
2 T. butter

Directions:
Directions:
Preheat oven 375º

Cook sugar, water, cream of tartar for 2 minutes. Add Ritz© crackers and cook for 2 more minutes, do not stir. Add lemon juice, lemon rind. Poor mixture in unbaked pie shell. Sprinkle pie mixture with cinnamon, dot with butter. Place top rust on pie and poke with fork to allow steam out, like other pies. Bake for 30 minutes.
