1 c. sugar
1 c. brown sugar
3/4 c. shortening
2 T. boiling water
2 eggs
4 c. flour
1 t. baking soda
1 t. baking powder
1 t. vanilla

Filling:
2 c. dates
1/2 c. sugar
juice of 1 lemon
1/2 c. nuts
Directions:
Directions:
Make filling: Combine dates, sugar and lemon juice. Cook over low heat until thick. Add nuts. Let cool.

Make cookie dough: Combine all ingredients. Roll out 1/4" thick. Spread with filling and roll. Chill. Slice and bake at 350º
