2 C. carrots grated fine
3 C. flour
2 C. Sugar
1 C. pineapple (crushed and drained)
1 ½ C. Wesson oil (vegetable oil)
1 C. nuts
1 can coconut
1 tsp. soda
3 eggs
½ tsp. salt
2 tsp. vanilla

Directions:
Directions:
Sift flour, soda, cinnamon and salt, mix oil and sugar. Break one egg at a time and beat. Add flour mixture and beat well. Add pineapple, coconut and carrots. Bake at 350º for 1 hour 20 minutes. Frost with cream cheese frosting.
