1 C. yellow cornmeal
¾ C. all-purpose flour
3 T. sugar
2 tsp. baking powder
¼ tsp. chili powder
Pinch of cayenne pepper (optional)
2 T. tub-style margarine
¾ C. skim milk
1 large egg white
2 T. canned milk green chili peppers, well-drained
3 T. chopped sweet red bell peppers

Directions:

Preheat oven to 400º. Spray an 8 x 8 inch baking pan with vegetable spray. In a medium bowl, mix the cornmeal, flour, sugar, baking powder, chili powder and cayenne pepper. With a fork, cut in the margarine until the mixture resembles course meal. Add milk, egg white, chili peppers and red pepper. Stir well but don’t over mix. Put mix in prepared pan. Bake for 17 minutes or until top is lightly browned and a toothpick in the center comes out clean. Makes 9 servings.
