3 eggs beaten
2 C. sugar
3 tsp. vanilla
1 tsp. salt
3 tsp. cinnamon
¼ tsp. baking powder
1 C. oil
2 C. grated zucchini
3 C. flour
1 tsp. soda
1/3-1 cup Nuts (optional)

Directions:
Directions:
Beat eggs until foamy. Add oil, sugar, zucchini and vanilla. Mix well. Blend flour, salt, soda, cinnamon and baking powder. Add to first mixture. Add chopped nuts. Bake 350º in well greased 9 x 5 inch loaf pans (2) for 1 hour. Loaves may be frozen.
