2½-3 lbs. pork tenderloin
1½ tsp. salt
1 T. rice wine vinegar
½ tsp. garlic powder
2 T. Hoisin sauce
¼ cup ketchup
¼ cup white sugar
3 drops red food coloring
Hot mustard, red sauce, sesame seeds

Cut pork loin in half lengthwise. In glass baking dish, mix together rest of ingredients. Add pork and coat with marinade mix. Cover and refrigerate overnight. Remove from refrigerator 1 hour before baking. Fill bottom of broiler pan with water, put the pork on broiler pan rack over water in pan. Roast in 350º oven for 1 hour. Turn once after 30 minutes. Cool for 15 minutes, slice pork into ¼ inch slices and serve with hot mustard, red sauce and sesame seeds. Serves 8 to 12 for appetizers.
 

CHINESE RED SAUCE & HOT MUSTARD

CHINESE RED SAUCE

½ cup ketchup
2 T. sugar
2 T. rice wine vinegar
In small mixing bowl, combine all ingredients and mix well. Refrigerate one hour before serving. Makes ½ cup.

CHINESE HOT MUSTARD
3 T. dry ground mustard
5 T. rice wine vinegar
In small bowl, combine all ingredients and mix thoroughly. Let sit one hour, not refrigerated, before serving.
