1 beef ribeye roast, small end (4-6 lb.)
2 T + 2 tsp chopped fresh thyme
2 T garlic-pepper seasoning
2 T minced shallot
1 C dry red wine
2 tsp Dijon-style mustard
1 T butter, softened

Directions:
Directions:
Heat oven to 250º. Combine 2 T Thyme and garlic-pepper and press onto the roast. Place in shallow roasting pan fat side up with a meat thermometer inserted into thickest part. Do not add water or cover. Roast for 1 3/4 - 2 hours for medium rare; 2-2 1/2 hours for medium. Remove roast when meat thermometer registers 135º for medium rare or 150º for medium and let stand for 15 minutes. Combine drippings, shallot and t tsp thyme in medium saucepan and cook, stirring, over medium heat 2-3 minutes or until shallot is crisp-tender. Add wine and mustard and simmer 8-10 minutes. Stir in butter and season with salt and pepper.
