Indian Toor Dal with Vegetables Recipe

1 cup Toor Dal *(dried split pigeon peas)
4 c water
1 tsp salt
1/2 tsp turmeric
1 Tbsp finely chopped fresh ginger
1 tsp mango powder (amchur)*
1 tsp garam masala *

Vegetable Chaunk:
2 Tbsp clarified butter (ghee)* or butter or oil
1/4 tsp cumin seed *
1/2 tsp black mustard seed *
1/2 tsp red chili powder *
2 bay leaves
Pinch of asafetida (hing) * (optional)
1 med chopped tomato
1 small zucchini chopped in 1/2 inch cubes
6 string beans chopped 1 inch long

Directions:
Wash dal, changing water several times until the water appears clear. Soak dal in 4 cups water for 30 minutes or longer. In pressure cooker add dal, water, salt, turmeric and ginger and cook on Med-high heat. When the pressure cooker starts steaming turn the heat down to medium and cook for about 8 minutes. Turn off the heat and wait until the steam has stopped before opening the pressure cooker. Mix dal well so there are no lumps. If thick add more boiling water. Mix the mango powder and garam masala with a few spoons of water and add the mixture to the dal.

For the vegetable chaunk:
Heat the oil in a saucepan. Test the heat by adding one cumin seed to the oil, if it cracks right away the oil is ready. Add the hing, cumin seeds, and mustard seeds. After seeds crack add the bay leaves and chili powder, stir for a few seconds and add the vegetables. Stir the vegetables and cook for 4 to 5 minutes till tender. Add vegetables to dal and mix gently.

Variation: omit vegetables and chili powder, substitute 4 red chili peppers and 1/4 tsp paprika.

This is a lovely golden dish studded with colorful vegetables. Mellow flavor if you cut the red chili powder back or use american chili powder.
