3 eggs
1 c oil
2 1/2 c grated zucchini (I grate mine in the blender with a bit of water)
3 tsp vanilla
2 1/2 c sugar

3 c flour
1 tsp salt
1 tsp soda
3 tsp cinnamon
1/4 tsp baking powder
1 c walnuts

Directions:
Directions:
Mix eggs, oil, sugar, zucchini and vanilla in a bowl.

Mix flour, salt, soda, cinnamon, and baking powder in another bowl.
Add nuts if desired.

Pour into 2 greased loaf pans and bake at 350º for 1 hr.

Cranberries or blueberries may be substituted for zucchini.
