2 cups spinach, torn into pieces
2 cups assorted lettuce torn into pieces
14 cup celery diced
1 green onion sliced
5 slices bacon cut into 1" pieces
Olive oil as needed
1/4 cup wine vinegar
1/2 tsp. worchestershire sauce
2 tbsp. sugar
2 tbsps. Bleu cheese ( or more to taste)

Directions:
Directions:
Mix spinach, lettuce, celery and green onion in serving bowl.
Sauté bacon until browned. Remove from drippings (remove drippings) and drain.
You should have 1/4 cup bacon drippings. If you have less than that add the oil e oil to make 1/4 cup.
Mix hot drippings with wine vinegar, Worcestershire and sugar and por over salad.
Top with cooked bacon and blue cheese and serve immediately
