4 loin or shoulder pork chops
1 tsp. salt
1/8 tsp. pepper
flour
2 tbsp. shortening or oil
2/3 cup uncooked rice
3 cups boiling salted water
4 thick slices tomato
4 rings green pepper
4 thin slices onion

Directions:
Directions:
Wipe chops with a damp paper towel, sprinkle with seasoning and dredge with flour. Brown in hot fat or oil, place in a greased casserole dish. Wash rice and cook 5 minutes in water. Place a slice of tomato, a ring of green pepper and a slice of onion on each chop, sprinkle with salt and pepper. Pour rice with water around chops and bake in oven at 350º for 1 hour or until rice and chops are tender. Add more water if needed.
