3 tbs butter
3 tbs. flour
4 cups chicken broth
2 cups coarsley chopped broccoli
3/4 cups chopped carrots
1/2 cup chopped celery
1 small onion chopped
1 small garlic clove, chopped
1/4 tsp.Thyme
1/2 tsp. salt
1/8 tsp. pepper
1 cup heavy cream
1 egg yolk
1 1/2 cup shredded Jarlsberg cheese

In large heavy saucepan, melt butter. Whisk in flour and cook several minutes, stirring. Remove from heat. Slowly blend in broth with whisk. Bring to a boil, stirring. Add next 8 ingredients. Cover. Simmer 8-10 minutes until veggies are tender.

In small bowl, blend cream and egg yolk . Gradually blend in several tbsp. soup to temper the egg mixture. Return to soup mixture, cook until thickened. Blend in cheese.
