4 medium to large baking potatoes
4 T. margarine
salt, to taste
pepper, to taste (optional)
milk

Directions:
Directions:
Wash potatoes. Pat dry. Grease and wrap in aluminum foil. Bake at 400 degrees until done, about 1 hour. Unwrap and cut potatoes in half. Scoop out with spoon leaving enough potato on skin to hold shape. Mash potatoes. Add margarine, salt, and milk. Return mashed potatoes to skin. Rewrap in foil and return to oven to heat.

These potatoes are delicious cooked just as above, but may be topped with cheddar cheese, spring onions, bacon, etc. They are great mixed with a little garlic or sour cream during the mashing . I usually use fat-free half-and-half for a creamier texture.
