1 apple diced
2 T. butter
2 T. brown sugar
1 T. sugar
1 t. cinnamon

1/2 cup butter plus 6 T.
3/4 cup firmly packed brown sugar
1/2 cup sugar
2 eggs
1 t. vanilla
1 1/2 cup all-purpose flour
1 t. baking soda
1 t. cinnamon
1/2 t. salt
3 cups Oatmeal (quick or old fashion, uncooked)


Optional additional ingredients:
raisins, nuts, dried fruit, cherries
pretty much what ever you want to make it special!

Working with first 5 ingredients, melt butter in pan over medium heat (be careful not to get it too hot) add apples, cinnamon and sugars. cook until soft, about 7 minutes.

Heat oven to 350º. In large bowl, beat butter and sugars until creamy. Add eggs and vanilla, beat well. Add combine flour, baking soda, cinnamon and salt, mix well. Add oats and apples, mix well.

Drop dough in rounded tablespoons onto an ungreased cookie sheet.
Bake 10-12 minutes until light brown. Cool 1 minute on sheet then remove to wire rack.
