Pork Adobo Recipe

1 tbsp olive oil
1 lb. cubed pork loin, cubed
2-3 bay leaves
1 head garlic, crushed
1/2 C soy sauce
1 tsp freshly ground pepper
1/4 C palm vinegar
1 lb new potatoes, cut in halves/quarters
8 oz white mushrooms

Directions:

1. Heat oil in a dutch oven. Brown cubed pork.

2. Crush and roughly chop garlic. Add to pot with bay leaves, soy sauce, ground pepper, and vinegar.

3. Simmer for 30 minutes. Add potatoes and continue simmering. When potatoes are cooked, add mushrooms, turn off the heat, and let it sit for 5-10 min. Serve over hot rice. Eat with a fork and a spoon.

This is Ted's take on a traditional Filipino dish. It doesn't normally have mushrooms and potatoes, so feel free to skip those ingredients. Adobo is always better reheated the second and third day.
