2 1/2 cups all purpose flour
1 3/4 cups whole wheat flour
1 3/4 C. packed brown sugar
1/2 C. baking cocoa
1 1/4 tsp salt
1 tsp baking powder
1 tsp baking soda
2 egg whites
1 egg
2 C. unsweetened applesauce
1 3/4 C. fat free milk
2 Tbsp canola oil
2 1/2 tsp vanilla extract
1 1/4 C. semisweet chocolate chips

Directions:

-In large bowl, combine flours, brown sugar, cocoa, salt, baking powder, and baking soda. In another bowl, whisk egg whites, egg, applesauce, milk, oil and vanilla. Stir into the dry ingredients just until moistened. Fold in chocolate chips.
-Coat muffin cups wit cooking spray;fill 3/4ths full with batter.
-Bake 350º for 18-20 minutes or until toothpick inserted near center comes out clean. Cool 5 minutes before removing from pans to wire rack. Serve warm
