2 tablespoon butter
3 tablespoon flour
1 cup milk
1/4 teaspoon salt
1/2 teaspoon pepper
1 cup mild or sharp shredded cheese(buy the shredded cheese, it is easier to melt
3 eggs separated

Directions:
Directions:
Melt butter, add flour and blend.
Add milk slowly for the best smoothness.
Add seasoning and cheese continue3d to stir until smooth and melted.
Add egg yolks and cool.
Whip the whites until stiff.
Fold into the cooled cheese mixture. Pour into buttered dish.
Place the dish in a small square pan, add some water.
Cook 325 degrees, for 35-40 minutes(the top should be lightly brown.
