1 cup peanut butter
½ cup packed brown sugar
1 egg
1 tbsp. vanilla
1 tsp. baking soda
1 cup semi-sweet chocolate chips

Directions:
Directions:
In a large bowl combine peanut butter, sugar, egg and vanilla and mix well. Stir in baking soda and chocolate chips. Transfer dough to an airtight container and store in the fridge for at least 2 hours and up to 5 days before baking.

Preheat oven to 350º. Line 2 cookie trays with parchment paper or cooking spray. Form dough balls about 2 tablespoons each and place on cookie sheets. Leave about 2 inches between cookies. Flatten slighty and bake 7 - 8 minutes.
