1 lb. shrimp, peeled and deveined
1 T extra virgin olive oil
1 can diced tomatoes
1 can tomato sauce
2 C diced zucchini
4-6 cloves garlic, minced
Lemon juice, fresh
1/4-1/2 C heavy whipping cream
crushed red pepper flakes
1 lb. cooked pasta of your choice

Basil, chopped for garnish

Directions:
Directions:
Season shrimp with salt and pepper. In large skillet, heat oil on high heat. When pan is hot, add shrimp and sear on both sides until cooked almost through. Set aside and keep warm.

In same pan, add zucchini, season with salt and pepper and saute to crisp tender. Add garlic, cook for 1 minute. Add tomatoes and tomato sauce. Season with salt and pepper and crushed red pepper flakes. Bring to boil and reduce heat and simmer for 10 minutes.

Stir in 1-2 T freshly squeezed lemon juice and heavy cream. Add cooked shrimp to pan and cook until thoroughly heated.

Serve over pasta and top with freshly grated Locatelli cheese and chopped basil.
