5-6 cups vegetable, beef, or chicken broth
1 can diced tomatoes
2 cans beans, rinsed and drained (any kind, or combination, you like)
2 1-lb. bags of frozen vegetable blends
4 cloves garlic, minced
1 tsp dried basil
1/2 tsp oregano
1/2 thyme
Tabasco, to taste (or other hot sauce of choice)
freshly ground black pepper and kosher salt
Optional: 1/2 C small pasta OR 2 C diced potatoes OR 1 cup frozen corn or other starchy vegetable OR 1/2 C quick-cooking grain (pearled barley, millet, or quinoa) OR cooked rice

Directions:
Directions:
Put 5 cups of broth and all remaining ingredients into a large pot and cook until vegetables are done, about 20-30 minutes. If the soup seems too thick, add more broth. Taste and adjust seasonings before serving.

This call also be made with 2 lbs of whatever fresh vegetables you have.
