New potatoes, or other small potato)
Kosher salt
Olive oil cooking spray
Fresh rosemary, chopped (or herb of your choice)

Preheat oven to 450º.

Bring a pot of salted water to boil and add as many potatoes as you need. Cook until fork tender.

Spray a baking pan with olive oil spray and place potatoes on pan leaving room between each potato.Gently press down on each potato with spatula or bottom of glass until smashed, but not completely broken apart.

Spray tops of potatoes with more cooking spray. Sprinkle with salt, freshly ground black pepper and herb of choice. Bake for 20-25 minutes or until golden brown.
