2 onions, chopped
6 clove garlic, chopped
3 stalks celery, sliced 1/4" wide
2 tsp oregano
2 tsp fennel seeds
2 C beef bouillon
1 C red wine (optional)
2 cups baby carrots, chopped
4 medium potatoes, cut in 1/2" chunks
1 C (or 14.5 oz.) canned chopped tomatoes
2 T Dijon mustard
1 tsp liquid smoke
1 tsp fresh rosemary (or 1/4 tsp dried)
generous pinch cayenne
1 15 oz. can white or pink beans, undrained
1 C soy burger or vegetable burgers broken into small pieces
Freshly ground black pepper, to taste
Chopped parsley, for garnish (optional)
Cooked whole grains of your choice

Directions:
Directions:
Cook onions, garlic, celery, carrots and spices in 1/2 cup of bouillon to soften, about 5 minutes. Add the remaining bouillon, wine, potatoes, tomatoes and remaining seasonings. Bring to a boil, reduce heat and simmer 15-20 minutes or until the carrots and potatoes are tender. Add the beans and soy crumbles and cook 5-10 minutes more. Adjust seasonings, garnish with chopped parsley if desired and serve over whole grains.
