1 T butter
1 T olive oil
2-3 ribs celery (sliced thin)
2-3 carrots (diced)
Medium onion (diced)
3-4 cloves garlic, finely chopped
1 c fresh green beans (cut into 1-2” lengths)
1 lb Kale, chopped …to taste
1-2 med zucchini (diced)
2 t fresh parsley and/or basil, chopped
3 boxes chicken broth (32 oz. ea) ** or 2 of the large cans (48 oz ea)
1 bay leaf
2-3 plum tomatoes (diced) ** or 1 15 oz can of diced tomatoes
2-4 oz prosciutto or ham or ham bone
Parmesan cheese rind (2-3 inches)
2-3 medium potatoes, peeled and diced ** I use less potatoes
1 (15 oz) can kidney beans
1 (15 oz) can garbanzo beans
2 (15 oz) can cannellini beans
Parmesan cheese, grated
salt & freshly ground black pepper

Directions:
Directions:
1. Heat butter and oil and sauté celery, carrots, onion and garlic (+salt and pepper)and cook until soft.

2. Add green beans, cabbage, zucchini, parsley and basil (+salt and pepper)and cook until soft.

3. Add chicken stock, bay leaf, tomatoes, prosciutto parmesan rind and potatoes (+salt and pepper).

4. Allow soup to boil and immediately reduce to simmer. Simmer for 30-45 minutes or until potatoes are soft. Add one can of each type of beans (reserving one can of cannellini beans to puree with some soup before serving) with their juices and simmer 5 minutes more. In a separate bowl, add about a cup of the hot soup mixture to the reserved cannellini beans and puree. Add back to the soup and simmer a few minutes more. Remove parmesan rind (if there’s any left!). Serve with grated parmesan cheese and fresh crusty bread.
