3 tbsp oil or butter
1/4 C flour
2 med onions, chopped
1 C celery, chopped
2-3 carrots, chipped
3 cloves garlic, minced
3 C chicken broth
1 can (16 oz) whole tomatoes in juice
1 lb okra, chopped
1 bay leaf
2 tbsp tabasco
3/4 lb andouille sausage
1/2 lb peeled, deveined shrimp

Hot cooked rice in a separate pot.

In a large saucepot or Dutch oven, heat oil/butter. Add flour and cook over low heat, constantly stirring, until mixture turns dark brown. This is your roux. Keep stirring frequently. It will have a nutty, not burned, aroma when done. Add onions, celery, carrots, bay leaf and garlic. Cook until vegetables are tender. Gradually add broth. Stir in tomatoes, okra, and tabasco. Bring to a boil. Add meat, cook 3-5 minutes until shrimp is pink and other meats are heated through. Remove bay leaf. Serve over hot rice.

You can replace one of the meats with shredded chicken. Also, frozen okra is totally acceptable in this recipe!
