1 lbs shrimp or prawns (20-25 count)
1/8 to ¼ cup olive oil
1 clove garlic minced
½ to 1 teaspoon oregano
¼ (more to taste) red chili flakes
2 to 3 Tablespoons fresh bread crumbs

Wash and peel Shrimp leaving tail on. Butterfly Shrimp, de-vein and wash. Put all ingredients in a bowl, mixing well, add butterflied shrimp. You can marinate for a while, not really necessary, but it can hold here until you’re ready with everything else. Place shrimp on a baking dish or sheet in one layer. Place under broiler at high heat for 4 to 5 minutes until shrimp pink up and bread crumbs brown and crisp a bit (less cooking time better than over cooked).

Frozen can be used as well if you thaw first and pat dry.
