1/2 c. unsalted butter, room temp
1 c. sugar
2 eggs
1 tsp. vanilla extract
1/3 c. plain yogurt
1 c. ripe mashed bananas (2)
3 1/2 c. all purpose flour
1/4 tsp salt
1 tsp baking powder
1/2 tsp. baking soda
1/2 c. shredded coconut
2/3 c. salted peanuts
1/2 c. toffee, caramel or butterscotch bits

Salted peanut topping:
1/4 c. shredded coconut
1/2 c. chopped salted peanuts
1/4 c. toffee, caramel or butterscotch bits
2 tablespoons carmel sauce

Directions:

preheat oven to 350º
generously spray 1 -12 cup bunt pan or 2 9x5 loaf pans place on parchment paper lined sheet pan.
in mixer bowl, cream butter and sugar until fluffy. add eggs, the vanilla, yogurt and mashed bananas,scrapping down often to blend batter evenly.
in separate bowl wisk together flour, salt, baking powder, baking soda. slowly stir dry ingredents into wet batter. fold in coconut, peanuts and toffee chips making sure all is well blended. spoon into baking pans. combine all topping ingredents in a small bowl mix well. sprinkel on top of cake drizzle on caramel.

bake 45-55 min. until cake tests done cool 10 min before removing from pan. drizzle more caramel if desired
