3 eggs
1 to 2 T sugar
1 3/4 c lukewarm milk
1/4 t salt
1 c all purpose flour (spooned into cup)
1/4 c butter
Directions:
Directions:
preheat oven to 425º
grease 9x13 inch pan well with vegetable shortening
beat eggs until thick and foamy
add sugar and beat well
add milk and salt and beat until mixed
add flour gradually and beat until batter is smooth.
put butter in greased pan and place in oven to melt
gradually add melted butter to flour mixture.
stirring only until mixed.
pour into pan and place in center of preheated oven.
bake for 25 to 30 minutes.
pancake will rise around edges of pan and in certain places in the center.
parts will be custardy and others will be crisp.
Cut into individual portions.
serve warm with butter, jam, fruit sauce or whipped cream and fruit.

for a more custardy pancake, increase milk to 2 cups or add 1 more egg.
