1 red pepper
1/3 red onion, chopped
1-3 cloves of garlic, finely chopped
1 TSR chili pepper
generous pinch cumin
generous pinch dry basil or Italian seasoning
1/2 can black beans
~2 green onions, chopped
~1-3 tsp balsamic vinegar
~1/4 cup shreaded mozzarella cheese
salt
balsamic vinegar

Directions:
Directions:
Add garlic, onion and pinch of salt to skillet and saute over medium heat until onions are translucent.
Add chili powder, cumin, basil/Italian seasoning black beans and a pinch of salt, cook additional 3-4 minutes until beans are heated.
Transfer mix to cool bowl, add green onion, balsamic vinegar, and cheese.
Cut peppers in half and clean the seeds out. Place peppers on baking dish and add mixture to each one. Sprinkle a little cheese on top.
Bake at 350 degrees for-15 minutes. Serve hot.
