Ingredients: 1 17 oz pkg (2 sheets) frozen puff pastry,thawed 3 tbsp extra virgin oil 1/2 ground beef 2 tbsp minced tarragon 1tbspground cumin 1/2 tbsp garlic powder 1 carrot diced 1/2 cup frozen corn,thawed salt and pepper 1 1/2 cups mashed potatoes (store bought or homemade)cook or heat as needed

Directions:º425 coat a mini muffin tin w/ cooking spray using a 2 inch round cutter,cut puff pastry into 48 round. Press rounds into pan and prick bottoms with a fork,transfer to freezer while preparing filling. Heat 1 tbsp.of oil in a skillet over medium-high heat;add hamburger cook until browned break up large chunks about 3 mins.Stir in tarragon,cumin and garlic powder;transfer bowl. Add remaining oil to the skillet and cook carrots over medium heat.Add corn and cook 5 mins. Return meat mixture to pan and stir together.Mix all together with salt and pepper to taste. scoop small amount of the filling into each pastry puff. Bake until pastry is golden brown,18-20 mins. Let cool slightly before removing. Take a little scoop of mashed potatoes place on top |
