1 cup plain flour
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. sugar
1 Tbsp. oil
1 egg
1 cup buttermilk

Directions:
Directions:
Mix dry ingredients. Add oil, egg, and buttermilk, Mix with wire whip; it will have a few lumps. Then drop by 1/4 cup spoonfuls onto hot greased griddle.

NOTE: My own "wrinkle" is adding a handful of chopped pecans. How can anything be bad with pecans?!!

I also heat the syrup in the microwave before serving.

This recipe is from my Foods class cookbook in my freshman year of college, and I've never used any other.

NOTE: This recipe can be doubled, tripled, quadrupled---and still comes out well---to feed a crowd. They also freeze well, and then can be heated in a toaster, toaster oven, or microwave. Better than "store bought."
