12 Large Eggs
Milk
1 tsp. Salt
1/2 tsp. ground Black Pepper
1 1/2 C. Diced Ham (Diced Bacon, Chopped cooked Broccoli or whatever fillings you prefer)
3 C. Shredded Cheese (Cheddar, Monterey Jack, a blend or whatever kind you prefer).
12 Quart Size Freezer Bags, ziplock style (do not uses regular ziplock bags-must be freezer bags)

Directions:
Fill a Dutch oven or large saucepan with water and bring it to a boil.
Beat eggs in a large bowl, add enough milk to equal 4 C. of egg and milk mixture. Whisk in the salt and pepper. Place 2 Tbsp. of Diced Ham (or whatever filling, or combination of fillings you prefer-I like Diced Ham and broccoli) in the bottom of each freezer bag. Add 1/4 C. of Shredded Cheese to each bag. Place 1/3 C. egg-milk mixture into each bag. Carefully press the air out of each bag and zip closed.
If using a Dutch oven, you can place six bags in the boiling water at a time. Boil for 8-10 minutes, until egg is set. Using tongs, carefully remove bags from water and place remaining six bags into the boiling water; boil for 8-10 minutes.
To serve, unzip each bag and slide omelet out of bag onto a plate. Garnish with additional shredded cheese if desired.

To make One Lonely Omelet:
Fill a saucepan with water and bring it to a boil.
With a fork, whisk one large egg in a 1/3 C. measuring cup, add enough milk to equal 1/3 C. of egg and milk combined; season with salt and pepper. In the bottom of a quart freezer bag , place 2 Tbsp. of filling (Ham, etc.). Add 1/4 C. of Shredded Cheese to the bag. Pour the egg-milk mixture into the bag. Carefully press the air out of the bag and zip it closed. Place bag into boiling water and boil for 5-8 minutes, until egg is set. To serve, unzip bag and slide omelet out of bag onto a plate. Garnish with additional shredded cheese if desired.
