3 or 4 pound beef brisket
salt and pepper
1 onion, sliced
1/4 cup chili sauce
2 T. brown sugar
1 clove garlic, minced
1 can (12 ounces) beer
2 T. flour
1/2 cup water

Directions:
Directions:
Preheat oven to 350 degrees. Trim excess fat from brisket (important), season with salt and pepper and place in 9x13 inch baking dish; cover with onion slices. In bowl combine chili sauce, brown sugar, garlic, and beer; pour over meat. Cover tightly with foil. Bake for 3 1/2 hours. Uncover and bake 30 minutes more, basting occasionally. Remove meat to platter. Allow drippings to cool slightly and pour into glass container and allow to sit until fat rises to the top. Skim off excess fat from drippings; pour drippings into sauce pan. Blend flour and 1/2 cup water; whisk into drippings in saucepan. Cook, whisking constantly, over medium heat until thickened and bubbly. Cut meat across grain. Pass beer gravy.
