3 beaten eggs
2 cups sugar
3 teaspoons vanilla
3 teaspoons cinnamon
3 cups flour
1 tsp salt
1 cup vegetable oil
1 tsp baking soda
1/4 tsp baking powder
3 cups shredded zucchini
1/2 cups nuts, chopped (optional)

Directions:
Directions:
Preheat oven to 350 degrees. Combine dry ingredients; add remaining ingredients and mix.
Bake 1 hr and 10 minutes or until tests done. Makes 2 loaves.

Another family favorite from the 1970s. For a sweeter bread, use only 2 cups shredded zucchini.
