2 1/4 c. crushed graham cracker crumbs
1/2 c. chopped nuts ( optional)
1 stick melted butter
3 (8 oz.) pkgs. cream cheese
3 eggs
1/2 tsp vanilla extract
1 pt. sour cream
3 Tbs sugar
1/4 tsp vanilla extract

Directions:
Directions:
Combine graham cracker crumbs, chopped nuts and melted butter. Press around spring form pan.In a bowl, cream sugar and cream cheese. Add eggs one at a time to sugar cream cheese mixture and then add 1/2 tsp. of vanilla.
Spoon into crust and bake 20 - 25 minutes at 275º. Take out of oven immediately. Combine sour cream 3 Tbs. sugar and 1/4 tsp sugar. Blend then spread on top of cheese cake. Bake for 5 minutes at 500º. Chill in spring form pan several hours before removing from pan. (Preferably overnight). My friend Debbie is a wonderful cook. Everyone at school would be eagerly awaiting her cheesecake when we had potlucks.
