6 boneless chicken breast, roasted and cubed
1 ½ apples cubed
1/3 c. walnuts chopped
1 ½ celery stalks diced
1 c. grapes cubed
2 sprigs green onion, chopped
½ c. lite mayo
1/3 c. balsamic vinegar
¼ tsp. minced garlic
salt and pepper to taste

Roast chicken 20-30 minutes with creole seasoning; cool and cube chicken. Add to large mixing bowl with all ingredients. Chill for 1 hour and serve over mixed greens or pita bread.
