1 (3 lb.)whole chicken, giblets removed
salt and black pepper to taste
2 T. olive oil
1 c. apple cider or chicken broth

Directions:
Directions:
Preheat oven to 400º. Place chicken in roasting pan and season chicken with salt, pepper and olive oil. Pour 1 c. of liquid in the bottom of the roasting pan. Bake for 1 hour 30 minutes or until chicken reaches 180º.

Let chicken rest before slicing. Use the dripping to make a quick gravy.
