2 chopped carrots
2 chopped onions
2 chopped celery ribs
6 garlic cloves sliced
6 parsley sprigs
2 bay leaves
2 fresh rosemary sprigs-3 inch
5# oxtails
2 t salt
1 t pepper
1/4 c flour
2 tblsp olive oil
2 c dry red wine
6 oz tomato paste
8 oz mushrooms, quartered
hot cooked rice

Directions:
Directions:
Place first 7 ingredients in slow cooker.
Toss oxtails with salt and pepper, sprinkle with four, toss. Cook in hot oil over medium heat for 3-4 minutes turning till browned. Transfer to slow cooker, reserving drippings.
Add wine to drippings and cook for 1 minute, whisk in tomato paste, cook for 2 minutes and add to oxtails.
Cook on low for 5-6 hours. Add mushrooms and cook 1 more hour.
Remove oxtails and vegetables with slotted spoon, Discard herbs and bay leaves. Skim fat. season with salt and pepper. Serve juice over meat and vegetables with cooked rice.
