1 tsp. oil
1 large onion, chopped
1 can (15 oz) red beans
1 can (15 oz) white beans
2 cans (15 oz) black beans
2 tsp. minced garlic
2 cans ( 14 1/2 oz) diced tomatoes
1 1/2 c. frozen corn
1 1/2 tsp. chili powder
1 1/2 tsp. ground cumin

Directions:
Directions:
Saute onion in oil. Rinse and drain the red and white beans. Add to skillet. Add black beans (with juice), tomatoes, and garlic. Add the corn, chili powder and cumin. Simmer 2 minutes or until heated through. Serve over rice.

Cheese and tortilla chips are yummy additions.

Leftovers may be frozen.
