Ingredients:
Ingredients:
About 2 c. elbow macaroni
2 T. grated onion
1 t. salt
1/4 t. pepper
3 c. shredded sharp cheddar cheese
2 c. White Sauce
1 T butter
Ingredients for White Sauce:
2 T. butter
2 T. flour
1/2 t. salt
1/4 t. pepper
2 c. milk

Directions:
Directions:
Put macaroni into boiling water with a little garlic salt to cook. While cooking, make white sauce: In medium saucepan on low heat melt butter, salt and pepper. Blend in flour and cook over low heat, stirring until mixture is smooth and bubbly. Extremely gradually, add milk while stirring constantly. Turn heat up to medium and continue stirring (I used to have the little girls do this part) until mixture comes to a boil. Remove from heat and let stand for a few minutes, stirring occasionally, until mixture has somewhat thickened.
Cook macaroni al dente, drain. Place in casserole dish 1/2 macaroni and then sprinkle salt, pepper and 1/2 of the onion, then cover with 1/2 of the grated cheese, repeat. Poor white sauce over the casserole. Dot with butter. Bake covered at 375º for 30 minutes, then uncover and bake for an additional 15 minutes.

Personal Notes:
Mother taught me to make this when I was engaged so that I would "know how to cook something for a man". Indeed, it has served me well...
